This pasta dish is rich with flavor and texture. Easy to make and healthy.
INGREDIENTS
- 2 cups of rotini
- 2 cups of spinach
- 2 cups of cherry tomatoes
- 1 cup EVOO
- 1/2 cup fresh lemon juice
- 1 1/2 of feta cheese, roughly chopped
- 1 large sweet onion, finely chopped
- Salt and pepper to taste
- 1 1/2 cups of walnuts
INSTRUCTIONS
STEP 1
Boil the rotini, drain, and put aside.
STEP 2
In a large bowl, combine spinach, cherry tomatoes and feta cheese. Add the lemon juice, olive oil, onion, rotini, salt and pepper and mix.
STEP 3
Cover the bowl and refrigerate. Before serving, toss in walnuts.
