The breakfast tacos contain rainbow Swiss chard that provides a mild and earthy taste. Filled with nutritional benefits, Swiss chard is a low-calorie vegetable that is high in magnesium, iron, potassium and vitamins A, C and K. A great way to start the day.
• 6 large free-range eggs, lightly beaten
• 3 seeded plum tomatoes, chopped
• 2 tbsp. minced cilantro
• 2 tbsp. EVOO
• 1/2 cup white onion, minced
• 2 seeded serrano chiles, minced
• 1 1/4 pounds rainbow Swiss chard, leaves and stems thinly sliced
• Freshly ground pepper
• Kosher salt
• 6 Warmed corn tortillas
In a large skillet, heat the oil. Add 1/2 cup of the onion, the chiles and a generous pinch of salt and cook over moderate heat, stirring, until the onion begins to brown, 9 minutes. Add the Swiss chard and cook, stirring, until softened, 6 minutes.
Lower heat and stir in the eggs and tomatoes until the eggs are cooked, 6 minutes. Stir in the remaining minced onion, cilantro, salt and pepper. Serve the eggs in warm tortillas with sour cream.
